My girlfriend missed her birth control for about 5 days since she was waiting on her next shipment, if we waited 2 weeks would she be fine? She was on the pills for about a year as of now, does the effectiveness of the pill wear off fast?

If your partner is not taking her birth control pills, then she is not protected. If she missed 5 days of pills, then she had no protection against pregnancy during these 5 days. When your partner begins her new pack of pills, you will need to wait at least 7 days for the pills to become effective. If you wait 2 weeks, this should be ample enough time for the pills to have become effective.
